Ingredients
For the Biscotti:
* 2 ½ cups All-Purpose Flour
* ¾ cup Granulated Sugar
* ½ cup Light Brown Sugar, packed

Instructions
1. Prepare the Dough:
In a bowl, whisk together the flour, baking powder, spices, and salt.
In a separate large bowl, beat together the granulated sugar, brown sugar, and eggs until smooth. Add the pumpkin puree and vanilla extract, mixing until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just incorporated. If using, fold in the chopped pecans.
2. Chill the Dough:
Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes. This helps firm up the dough for easier shaping.
3. Shape and Bake:
