Here's a delicious recipe for Pumpkin Muffins that you can easily make at home. This recipe yields soft, moist muffins perfect for fall.
Ingredients
For the Muffins
* 1 ½ cups (340g) canned pumpkin puree (not pumpkin pie filling)
* 2 large eggs
* ½ cup (100g) granulated sugar
* ½ cup (100g) light brown sugar, packed
* ½ cup (120ml) vegetable oil (or melted coconut oil)
* ¼ cup (60ml) milk (dairy or non-dairy)
* 1 ¾ cups (219g) all-purpose flour
* 1 teaspoon baking soda
* 1 ½ teaspoons ground cinnamon
* 1 teaspoon pumpkin pie spice (optional)
* ½ teaspoon salt
For the Streusel Topping (optional)
* 5 tablespoons all-purpose flour
* 5 tablespoons unsalted butter, melted
* 5 tablespoons demerara sugar (or brown sugar)
* ¾ cup chopped pecans or walnuts
* ¼ teaspoon cinnamon
Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (218°C). Line a muffin tin with paper liners or grease it lightly.
2. Prepare the Streusel Topping:
In a small bowl, combine flour, melted butter, demerara sugar, chopped nuts, and cinnamon. Mix until crumbly and set aside.
3. Mix Wet Ingredients:
In a large bowl, whisk together the pumpkin puree, eggs, granulated sugar, brown sugar, vegetable oil, and milk until smooth.
4. Combine Dry Ingredients:
In another bowl, whisk together flour, baking soda, cinnamon, optional pumpkin pie spice, and salt.
5. Combine Mixtures:
Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined; be careful not to over-mix.
6. Fill Muffin Tin:
Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the streusel topping over each muffin.
7. Bake:
Bake for 5 minutes at 425°F, then reduce the temperature to 350°F (177°C) and bake for an additional 15–17 minutes or until a toothpick inserted in the center comes out clean.
8. Cool and Enjoy:
Allow muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
