These Pumpkin Snickerdoodles are a delightful twist on the classic cookie, featuring the warm flavors of pumpkin and spices. They are soft, chewy, and perfect for fall!
Ingredients
For the Cookies:
* ½ cup (113 g) unsalted butter, melted and cooled
* ¾ cup (150 g) granulated sugar
* ¾ cup (165 g) packed light brown sugar
* 1 large egg yolk
* ½ cup (120 g) pumpkin puree (not pumpkin pie filling)
* 1 teaspoon vanilla extract
* 2 ½ cups (300 g) all-purpose flour, spooned and leveled
* 1 tablespoon cornstarch
* 1 teaspoon cream of tartar
* 1 teaspoon baking soda
* ¼ teaspoon baking powder
* 1 ½ teaspoons ground cinnamon
* ½ teaspoon ground nutmeg
* ½ teaspoon ground ginger
* ¼ teaspoon ground cloves
* ¼ teaspoon salt
For the Cinnamon Sugar Coating:
* ¼ cup (50 g) granulated sugar
* 1 tablespoon ground cinnamon
Instructions
1. Prepare the Dough:
In a mixing bowl, whisk together the flour, cornstarch, cream of tartar, baking soda, baking powder, spices, and salt. Set aside.
In a separate bowl, cream together the melted butter, granulated sugar, and brown sugar until well combined.
Mix in the egg yolk, pumpkin puree, and vanilla extract until smooth.
2. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
3. Chill the Dough:
Cover the dough with plastic wrap and refrigerate for at least 1 hour (up to 3 hours is optimal) to reduce spreading.
4. Prepare Cinnamon Sugar:
In a small bowl, mix together the granulated sugar and cinnamon for rolling.
5. Shape and Bake:
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Using a cookie scoop or tablespoon, portion out the chilled dough and roll each ball in the cinnamon sugar mixture.
Place on the prepared baking sheets about 2 inches apart.
Bake for 9 to 11 minutes or until they are slightly under-baked; they will continue to cook on the baking sheet after being removed from the oven.
6. Cool:
Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
